Recipe: Curry Roasted Cauliflower

If you’re a fan of the bold flavors of Thai curry, you have got to try this simple yet flavorful side dish!  In the recipe, coconut milk helps to thin out the curry paste and adds a little more volume to toss with the cauliflower and coat it evenly.  Roasting the cauliflower gives it a crisp-tender texture and ensures the curry flavor envelopes each piece! We imagine this flavor combo would pair well with other vegetables, like broccoli and sliced cabbage, or with potatoes and sweet potatoes for a bold and satisfying starchy side dish. Curry Roasted Cauliflower

Serves 5

 

Ingredients

  • 1 medium head of cauliflower, chopped into florets
  • 2 Tbsp red curry paste
  • 3 Tbsp canned coconut milk (shake can to incorporate liquid and solids before measuring)

 

Directions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Combine red curry paste and coconut milk in a small bowl and pour onto cauliflower.  Toss to combine.
  3. Spread cauliflower onto a baking sheet coated with non-stick spray.
  4. Bake the cauliflower for 15 minutes. Remove it from the oven and stir/flip. Place it back in the oven, cooking another 10-15 minutes or until the desired texture is achieved (the time will vary based on the size of the pieces).
  5. Serve warm alongside your desired protein and starch. It pairs great with baked chicken or fish, roasted sweet potatoes, or stovetop rice.

 

Tips:

  • Store leftover curry paste in a sealed container in the fridge for several weeks.
