Recipe: Curry Roasted Cauliflower

Curry Roasted Cauliflower

Ingredients
- 1 medium head of cauliflower, chopped into florets
- 2 Tbsp red curry paste
- 3 Tbsp canned coconut milk (shake can to incorporate liquid and solids before measuring)
Directions
- Preheat oven to 375 degrees Fahrenheit.
- Combine red curry paste and coconut milk in a small bowl and pour onto cauliflower. Toss to combine.
- Spread cauliflower onto a baking sheet coated with non-stick spray.
- Bake the cauliflower for 15 minutes. Remove it from the oven and stir/flip. Place it back in the oven, cooking another 10-15 minutes or until the desired texture is achieved (the time will vary based on the size of the pieces).
- Serve warm alongside your desired protein and starch. It pairs great with baked chicken or fish, roasted sweet potatoes, or stovetop rice.
