Recipe: Veggie and Stuffing Breakfast Hash
When we hear the word “stuffing,” we usually associate it with Thanksgiving and dinnertime. However, its savory herbs and flavors can pair really well with breakfast foods, too! This quick breakfast hash is a fantastic way to infuse extra veggies into our morning while changing the texture of leftover stuffing, making it crispy and toasted. Pair with eggs or another protein source for a delicious Plate Method breakfast!
Veggie and Stuffing Breakfast Hash
Serves 4
Ingredients:
- 1 Tbsp butter
- 1/2 medium zucchini, cubed
- 4 oz mushrooms, chopped
- 1 1/2 C leftover stuffing/dressing
Directions:
- Warm a large skillet or sauté pan over medium heat. Add the butter to the warmed pan, and allow to melt.
- Once the butter is melted, add the zucchini and mushrooms and cook, stirring occasionally, until the zucchini has softened, about 5 minutes.
- Turn the heat up to medium-high. Add the stuffing to the frying pan with the veggies and mix until well incorporated.
- Gently flatten the stuffing mixture into a single layer. Once flattened, do not stir. Allow the stuffing to cook until the bottom is crispy, about 5 minutes.
- Carefully flip the stuffing over a spoonful at a time. Re-flatten into a single layer and again allow for the stuffing to cook, undisturbed, for another 3-5 minutes or until the second side is crispy.
- Divide into four servings and place on plates. Add protein(s) of choice and enjoy!
