Recipe: Mediterranean Stuffed Meatballs

These Mediterranean Stuffed Meatballs are a delicious way to add a boost of veggies to a classic recipe concept. By incorporating a mix of colorful veggies like spinach, onions, and a variety of bell peppers, you’re getting a wide array of vitamins, minerals, and phytonutrients to support overall health. Plus, adding veggies and feta keeps the meatballs juicy and tender, making it a perfect way to sneak extra vegetables into a fan-favorite dish without compromising the taste.

Enjoy these tasty meatballs on their own, take them to your next family gathering, or incorporate them into a plate method meal by adding a starch and some additional non-starchy vegetables. Our favorite way to enjoy them is by serving over a bed of rice or quinoa with fresh veggies like cucumber slices and shredded carrots, or cooked veggies such as roasted broccoli, zucchini, and squash. Top with a dollop of tzatziki and enjoy!

 

 

Mediterranean Stuffed Meatballs

Serves 5 (makes ~20 meatballs, about 4 meatballs per serving)

 

Ingredients

  • 1.5 lbs ground turkey
  • 2/3 C bread crumbs
  • 1 large egg
  • 3/4 C crumbled feta cheese
  • 1-2 handfuls of spinach, roughly chopped
  • 1/2 yellow onion, finely chopped
  • 2 red, yellow, or orange bell peppers, finely chopped
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

 

Directions

  1. Preheat oven to 400°F and line a large baking sheet with aluminum foil or parchment paper.
  2. In a large mixing bowl, combine ground turkey, bread crumbs, egg, feta cheese, chopped spinach, chopped yellow onion, chopped bell peppers, Worcestershire sauce, garlic powder, salt, and pepper. Mix well with hands and then form into 2-inch meatballs, placing onto prepared baking sheet about 1″ apart.
  3. Bake for 20-25 minutes, or until meatballs reach an internal temperature of 165°F. Remove from oven and serve warm with desired pairings.

 

Tip: Meatballs may need shorter or longer cook time depending on your oven!

 

Swaps

  • For ground turkey: lean ground chicken or lean ground beef
  • For feta cheese: crumbled goat cheese or other cheese of choice
