Mediterranean Bistro Box
Serves 1
Ingredients
- 3-5 ounces shredded/chopped rotisserie chicken
- 3-4 falafel pieces
- 2-3 Tbsp hummus
- 2 Tbsp olives
- 4 mini sweet peppers, sliced
- 1/2 cucumber, sliced
- Optional: feta cheese, fresh basil
Directions
- To easily assemble the bistro box, place all ingredients on a kitchen counter.
- Complete any necessary prep, such as slicing veggies or heating frozen falafel.
- Add each ingredient into the sections of a divided food storage/meal prep container. Suggested pairings include: chicken in one section, falafel, hummus, and olives in another, and sweet peppers and cucumbers in a final section. Feel free to mix and match as desired.
- Cover and store in the fridge until ready to eat or transport for an easy workday lunch.
