Recipe: Cucumber and Tomato Salad
Don’t let the short and familiar ingredient list fool you; this salad packs a punch in terms of freshness and flavor! A quintessential simple summer salad that does just as well standing alone as a non-starchy veggie side or tossed with couscous or quinoa for a heartier salad. Got leftovers after day one? Cucumber and Tomato Salad
Serves 2
Ingredients
- 1 C cherry tomatoes, halved
- 2 medium cucumbers, seeded and diced
- 1 small red onion, chopped
- 2 Tbsp balsamic vinegar
- 1 lemon, juiced
- Salt and pepper, to taste
- Optional – Add dried or fresh herbs, such as basil, oregano, thyme, or parsley.
Directions
- Combine tomatoes, cucumbers, and red onion in a bowl.
- Drizzle vegetables with balsamic vinegar and stir to combine.
- Add freshly squeezed lemon juice on top and sprinkle in salt and pepper (and herbs, if using).
- Stir to combine and enjoy!
