Recipe: Crispy Air-Fried Chickpeas

Did you know the chickpea is considered an ancient legume? There’s evidence that they were cultivated as far back as 7500 BCE. They’ve stood the test of time thanks to their good source of protein, fiber, and essential nutrients like magnesium, iron, and folate. While there are a lot of great ways to enjoy chickpeas, air-frying them with a little oil and seasoning helps transform them into a crunchy, tasty snack that can be enjoyed any time of day, or even used in place of croutons on a salad!
Crispy Air-Fried Chickpeas
Serves 2-4
Ingredients:
- 15.5 oz can of chickpeas
- 1 Tbsp of olive oil
- 1 Tbsp seasoning blend of choice (such as dried ranch seasoning)
Directions:
- Preheat the air fryer to 390 degrees Fahrenheit
- Drain the can of chickpeas in a colander and rinse for 30 seconds to remove the canning liquid.
- To ensure maximum crisp potential, pour the chickpeas onto a clean kitchen towel and gently pat them dry.
- Once dry, place chickpeas in a medium bowl. Add the olive oil and seasoning of choice. Toss until well combined.
- Add the chickpeas to the basket of an air fryer and cook until light and crispy, about 12-18 minutes. Shake the basket every 5-6 minutes while cooking to ensure even crisping.
- Enjoy when fresh, or cool to room temperature, then store in an airtight container on the counter for 3-5 days.
Tip: If leftover chickpeas lose their crisp when stored, pop them back into the air fryer for 2-3 minutes to crisp back up!
