Recipe: Quick and Easy Tomato Soup
High-quality tomatoes, Italian spices, and less than 20 minutes are the foundation for this incredibly simple but impressively delicious tomato soup. It’s worth some effort to upgrade from the canned tomato soup we remember from childhood. To really enjoy a trip down memory lane, make an elevated ‘adult grilled cheese’ with some sourdough bread and sharp cheddar. Or a simple cheese and cracker combo for a quick, satisfying meal. Truly a match made in heaven!
Quick and Easy Tomato Soup
Serves 6
Ingredients
- 32 oz carton vegetable broth
- 1 small onion, diced
- 28 oz can tomatoes with basil and oregano
- 1 Tbsp Italian seasoning
- Salt and pepper, to taste
Directions
- Pour a small amount of broth (1/4 cup) into a saucepan over medium-high heat.
- Add the diced onions and sauté until translucent and fragrant for about 5 minutes, adding extra broth as needed to keep onions from sticking to the pan.
- Add tomatoes, remaining broth, Italian seasoning, salt, and pepper to the saucepan, stirring to combine.
- Using an immersion blender, puree the mixture until smooth (if you don’t have one, blend all ingredients in a blender before adding to the saucepan).
- Once smooth, bring mixture to a boil over high heat, then reduce to a simmer and cook for 8-10 minutes before serving.
