Recipe: Mediterranean Stuffed Meatballs

Mediterranean Stuffed Meatballs
Serves 5 (makes ~20 meatballs, about 4 meatballs per serving)
Ingredients
- 1.5 lbs ground turkey
- 2/3 C bread crumbs
- 1 large egg
- 3/4 C crumbled feta cheese
- 1-2 handfuls of spinach, roughly chopped
- 1/2 yellow onion, finely chopped
- 2 red, yellow, or orange bell peppers, finely chopped
- 1 tsp Worcestershire sauce
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Directions
- Preheat oven to 400°F and line a large baking sheet with aluminum foil or parchment paper.
- In a large mixing bowl, combine ground turkey, bread crumbs, egg, feta cheese, chopped spinach, chopped yellow onion, chopped bell peppers, Worcestershire sauce, garlic powder, salt, and pepper. Mix well with hands and then form into 2-inch meatballs, placing onto prepared baking sheet about 1″ apart.
- Bake for 20-25 minutes, or until meatballs reach an internal temperature of 165°F. Remove from oven and serve warm with desired pairings.
Tip: Meatballs may need shorter or longer cook time depending on your oven!
