Recipe: Zucchini Roll Ups

Zucchini roll ups are just one example of a unique application for this versatile veggie. We’ve seen it used in sweet recipes such as breads, muffins, overnight oats, and smoothies, as well as savory dishes including grilled, sautéed, stuffed, and spiralized. For these zucchini roll ups, we used thin slices and baked them, creating a tender texture that allows for developing a few simple ingredients that transform into a flavorful vegetable pairing.
Baking brings out the mild sweetness of zucchini and summer squash. Pairing it with a rich tomato flavor and salty olives truly accentuates these simple ingredients. Tomato paste isn’t often used in this way, but it does have a high concentration of lycopene, an antioxidant known for protecting our bodies against certain types of cancer, supporting heart health, and protecting our skin from sun damage. Olives are rich in monounsaturated fats, which help to optimize cholesterol levels, and are a source of antioxidants as well.
Despite this dish having just three ingredients, it’s flavor-packed! We suggest pairing these rolls ups with chicken or fish, prepared either grilled or baked, and served alongside your favorite starchy vegetable, bean, or whole grain.
Zucchini Roll Ups
Serves 5
Ingredients:
- 2 large zucchini, sliced thinly lengthwise
- 6 oz can tomato paste
- 2.25 oz can sliced black olives
Directions:
- Preheat the oven to 375°F. Line 2 baking sheets with parchment paper.
- Place zucchini slices onto prepared baking sheets and bake in the oven until soft and mostly dry, approximately 20-25 minutes.
- Remove pans from the oven and evenly spread 1 tablespoon of tomato paste on top of each zucchini slice. Sprinkle a few olives onto the tomato paste on each zucchini slice.
- Starting at one end, roll each zucchini slice tightly.
- Serve immediately or store covered in the refrigerator for up to 3 days. Reheat to serve.
