Recipe: Thanksgiving Leftovers Stuffed Peppers
Whether you call it stuffing or dressing, there’s a high likelihood this Thanksgiving side dish is a staple on your dinner table. While it’s versatile and tasty, stuffing can be a bit problematic because it’s often made in large volumes, and we’re left scratching our heads, wondering what to do with all the leftovers. The great thing about this stuffed pepper recipe is it offers a chance to repurpose the stuffing while using up leftover turkey and adding a new flavor profile to break up the monotony of leftovers!
Thanksgiving Leftovers Stuffed Peppers
Serves: 4
Ingredients:
- 4 bell peppers
- 2 C leftover stuffing/dressing
- 2 C leftover turkey, finely chopped
- 1 C marinara sauce
- 1/2 C shredded mozzarella
- Cooking spray
Directions:
- Preheat oven to 400 degrees F. Lightly grease a 9×13 baking pan with cooking spray.
- While the oven preheats, cut each bell pepper in half lengthwise. Remove the seeds, ribs, and stem.
- Place the peppers in the greased baking pan, cut side down. Lightly spray with cooking spray. Place the baking pan with the peppers in the oven and bake for 12-15 minutes or until softened.
- Meanwhile, add the stuffing, chopped turkey, and marinara sauce to a large bowl. Mix until well combined.
- When the peppers have softened, remove them from the oven. Using a spatula, carefully flip each bell pepper half over so the cut side faces up. Fill each half pepper with the stuffing mixture. Sprinkle with 1-2 Tbsp of shredded mozzarella.
- Place the peppers back in the oven and bake again at 400 degrees F for about 20 minutes or until cheese is fully melted and the filling is heated through.
- Take the peppers out of the oven and allow them to cool for about 5 minutes. Then serve and enjoy!
