Rachael is a Licensed and Registered Dietitian/Nutritionist working with patients and corporate wellness clients in the Wilmington area and online via telehealth services.
Born and raised in Raleigh, she earned her B.S. in Nutrition Science through NC State University, while working as a nutrition advocate through NC State Dining. She then completed her Master’s degree in Nutrition through Meredith College and continued onto her dietetic internship through Meredith as well. She provided medical nutrition therapy to some of the most complex cases during her clinical rotation at WakeMed Cary. Other rotations included Rex Wellness where she demonstrated online cooking classes and Lincoln Community Health Center Program where she created a tool to help WIC participants measure themselves accurately at home during the pandemic. Rachael pioneered a social media campaign for Nutrigenetics Specialists where she learned how genes may affect nutrient metabolism and chronic disease risk.
Rachael was inspired to begin her path in nutrition by her great grandmother who used plants and herbs as medicine in the mountains of Peru. She grew up in a food-loving household that instilled in her a love of cooking, especially with various cuisines. Her passions include digestive health, plant-forward approaches, and helping others to navigate food allergies/intolerances. Rachael’s goal is to inspire others to find their own way of incorporating sustainable, realistic, and good nutrition choices into their healthy lifestyles.
